Initital Thoughts

I have what I’d probably call Paleo leanings. That is to say that I don’t follow a strict Paleo diet but it makes a lot of sense to me. Good source of protein and fat, lots of veggies, some fruit. As time progresses, I’ll likely transition into something a little closer to full-on Paleo. But, for now, I want to work through my Genius Recipes Project and see where I am at that point in time.

Nom Nom Paleo is really a wonderful resource–both the cookbook and her blog–regardless of where your food efforts are directed. Michelle Tam is quite the foodie and her recipes reflect that. She wants to eat Paleo and that Paleo had better be good, damnit!

Her Slow Cooker Kalua Pig is particular favorite of mine. Dress it up with some BBQ sauce and you’ve got instant pulled pork. Toss some in a skillet with some coconut oil and you’ve got fajitas. Also, check out her Damn Fine Chicken. Whether grilled or baked in the oven it is, in fact, mighty fine!

Oh my. Just a bit of sparkle has dimmed from this cookbook. Egg Foo Young, I’m looking at you. I’ve read raves about it on NNP’s website. My opinion is, let’s say, just a bit different. RUN, my possums. Run far, far away. I like spinach. I like eggs. I like ham. I like them all together. But mixed together and bound with coconut flour? Not my thing, sorry. I find that the coconut flour turns them into a dry and tasteless mess.

At the same time, I also tried out the Devils on Horseback. Not bad. Not bad at all. I’d consider making them for a party where I knew some Paleo folks might be. The idea for dairy-free ricotta is a good one though buying macadamias in bulk is a bit pricey for something that I’m kind of lukewarm about.
