I’ve recently started following a kind of Paleo-type thing. Good sources of healthy proteins and fats. Lots of veggies. Some fruit. No sugar, processed foods, grains, dairy, legumes, MSG or carrageenan. Being a project person, I got into planning out menus for the next several days.  First up… a Paleo chili recipe from The Clothes Make the Girl. I made a few very slight mods. The result was delicious! Rich and meaty with the little bit of cocoa resulting in a nod to mole. Paleo Chocolate Chili. Yum!

This recipe is W30 compliant. (Though check your ingredients to make sure they are individually compliant.)

  • 2 tablespoons coconut oil
  • 2 medium onions, diced (about 2 cups)
  • 4 cloves garlic, minced (about 4 teaspoons)
  • 2 pounds ground beef
  • 1 teaspoon dried oregano powder
  • 2.5 tablespoons chili powder
  • 2.5 tablespoons ground cumin
  • 1.5 tablespoons unsweetened cocoa
  • 1 teaspoon ground allspice
  • 1 teaspoon salt
  • 1 tablespoon Magic Mushroom Powder (optional, see note)
  • 1 can (6 ounces) tomato paste
  • 1 can (14.5 ounces) fire-roasted, chopped tomatoes
  • 1 can (14.5 ounces) beef broth
  • 1 cup water
  1. Place a large, heavy bottomed pot over medium-heat. Add coconut oil and allow to melt. Add onions and cook until translucent. Add garlic and cook for around 30 seconds. Crumble the meat into pot and brown until completely cooked.
  2. In a small bowl, mix the oregano, chili powder, cumin, cocoa, allspice and salt. Stir until well combined. Add it to the meat-onion mixture and stir until fully incorporated. Add tomato paste and stir until combined.
  3. Add the tomatoes with their juice, beef broth and water to the mixture. Bring it to a boil and then reduce heat so the chili simmers gently.
  4. Simmer for 2 hours and then enjoy!
