It was a chilly day today in Topeka. Perfect weather for soup! Alas, I also procrastinated a bit and needed to get something going in a hurry. Vitamix to the rescue! I made up a quick batch of a blended tomato soup. It turned out pretty decently. Not bad for soup in 4 minutes. I might make a creamy-bisquey version by adding a little heavy cream next time.
When in season, I use fresh tomatoes from the farmer’s market. When not, I like Dei Fratelli (I’ve liked everything that I’ve tried from Dei Fratelli) or San Marzano canned tomatoes. FYI, Trader Joe’s carries a San Marzano canned tomato that is tasty and priced reasonably.
- 1 28 oz can of tomatoes in their juice (I like Dei Fratelli or San Marzano tomatoes) or roughly two pounds of fresh tomatoes
- Herbs and seasonings to your liking
- Place the tomatoes and in a Vitamix mixer. Season to taste. (I like basil and a little sea salt.) Start the Vitamix at variable 1 and gradually increase to 10. Let it go for 3 minutes or until it starts to steam. Pour into a bowl and enjoy!
If you find the soup a little thicker than you like, adding a little water, broth or stock will help think it out.
