It has been a crazy busy several days! Looking for a quick dinner, I took an inventory of my last Trader Joe’s haul. English peas and pancetta!
Found in the produce section, I had originally snagged a bag of fresh English peas with plans to make a chilled pea soup. The pancetta came pre-cubed and I grabbed it on a whim. Happy accident, that!
So simple, this doesn’t even merit a recipe. I tossed the pancetta in a naked skillet and sautéed until brown and crisp. While that was going on, I put some salted water on to boil and then blanched the peas for two minutes. The drained peas got tossed into the skillet with the hot pancetta. After that, I added a sprinkle of salt and pepper, and a dash of a light vinaigrette. Gave it a quick stir in the hot pan and then dished it out with a sprinkle of parmesan. From start to finish, dinner was ready to go in under 10 minutes.
Quick… tasty… it was a hit all around!
